COCONUT GLUTINOUS CAKE wingko babat

Ingredients:

1 cup glutinous rice flour

½ - ¾ cup grated coconut

100 g granulated sugar

½ tsp vanilla powder

1 tbsp butter

½ tsp salt

2 eggs

100 ml coconut milk from ¼ coconut whole

2 tbsp oil for brushing


Method:

Using hand, mix together grated coconut, salt, vanilla powder, butter and granulated sugar.

Add in glutinous rice flour and continue kneading.

Add egg one by one while continue kneading.

Pour coconut milk little by little while kneading.

Use low fire, heat pan, brush with little oil, and place mixing cake around 1 ½ tbsp, not to thick.

Turn it around often until cook on both side and inside.

Make 20 cake
