Grilled LOBSTER with BALINESE SPICES

lobster with balinese spices
Udang karang mekalas

Ingredients:
1 kg lobster
250 ml coconut milk from ½ whole coconut
3 cm galangal, smashed
½ tsp sugar
½ tbsp salt or to taste

Spices, pasted:
6 pcs shallots
8 cloves garlic
4 pcs candlenut
1 ½ cm lesser galangal
2 pcs long red chili
4 cm turmeric

Method:
Sauté spices paste, galangal until aromatic.  Add sugar and salt to taste. 
Pour coconut milk slowly while stirring.  Cook until liquid reduced half.
Take out and use that spices for brushing lobster.
Grill lobster until cook while brushing occasionally.
